The USA now holds 3 races of the season, and since we've missed a few snacks, this week we combine Texas and Las Vegas.
No one goes hungry.
Vegas doesn't seem to have created any savory snacks that appeal to us. So we stretched 'snack' to 'Dirt Dogs'. A brand name, and actually originating in California - but that's close enough on the map!
It's a beef sausage wrapped in bacon. Housed in a bun, topped with "grilled vegetables" (we took that to mean fried onions) and smothered in multiple sauces. Over of all that, in their restaurants there's a topping of 'bacon bits', which (apologies if I ruin anyone's life-long beliefs here, along with Santa Clause and the Tooth Fairy) aren't really bacon - they're flavored breadcrumbs! But we took this seriously so crispy-fried tiny pieces of dry-cured smoked bacon. This turns out to have been one of the best discoveries of the season.
No complaints here. But they're just glorified cows-in-blankets really.

Texas on the other hand was not fast food. American portions do tend to be sufficient to feed more than a small family, so this snack made our whole Sunday dinner!
2kg of beef brisket was smoked over the barbeque for 8 hours. Your mouth should be watering at this point. This was very much new territory for me in cooking, so I did what was truly necessary and watched an Aussie teaching me how to use the snake method for indirect heat in the kettle barbie and smoking with hardwood chunks, repeatedly interrupted with beers.
But I didn't know what should go with this little snack - so we had everything we could think of: Dave's coleslaw, Heidi's potato salad, mac & cheese, tomato salad, salsa, sour cream, beetroot and salad.
This did not disappoint. Crispy edges, smoky tang and tender mouthfuls of joy. Worth the patience.

There is only enough beef left over for one sandwich at Monday lunch. Sharing it is not an option.
